Frozen Whole Foods Bursting With Vitamins

We’ve heard it before that frozen vegetables, fruit and other whole foods may be better for us. But why?
The goodness of a frozen fruit or veggie wonder goes beyond taste, though taste is the top priority. The key to our WHY? question hides in the nutrient preservation. All begins with the freezing process.
• Fresh produce picked when it’s ripe
• Fresh veggies and fruit are blanched to kill off bacterial and stop the ripening process
• Clean produce is flash-frozen at the peak of its freshness
Just these three steps above – a very simplified process may I add – ensures you and I will get the best tasting quality pieces of fruit or vegetable when we need it.
A study done by the University of Georgia looked at specific fruit and vegetables and compared their nutritional analysis for a course of two years. In addition, the researchers were looking at the specific data variationss for the specific components like:
• l-ascorbic acid (vitamin C)
• trans-β-carotene (provitamin A), and
• Total folate
These are the “subjects” of the research:
• Broccoli
• Cauliflower
• Corn
• Green beans
• Green peas
• Spinach
• Blueberries, and
• Strawberries
The findings were interesting and conclusive.
Finding One
In the majority of comparisons between nutrients within the categories of fresh, frozen, and “fresh-stored”, the findings showed no significant differences in assessed vitamin contents.
Finding Two
Frozen produce outperformed “fresh-stored” more frequently than “fresh-stored” outperformed frozen.
The resulted opinion from this study is to show that fresh food does not outperform its frozen counterpart when it comes to nutritional values. Actually, frozen foods have much more “saved” nutritional value .
One more thing to keep in mind. The fresh produce is usually frozen right near the site where it was collected or transported with a minimum loss of nutrients. It is a logical conclusion that frozen vegetables and fruit may have more vitamins and minerals preserved in them than fresh produce which is hauled hundreds of miles away into the supermarkets to be sold in.
That is why when we eat FRESH, it is wise to go to our local fresh markets as often as we can. Obviously, not everyone has this privilege and convenience. Then come frozen vegetables and fruit to the rescue!
Eat more of fresh produce items when they are in peak season, when they are ripe and offer the maximum nutritional benefits. It usually happens during the summer months. For the rest of the year, add more frozen veggies, berries and fruit from the organic and reputable sources.
